Healthy Turkey Rice Burgers

Equipment

  • Large Mixing Bowl
  • large frying pan

Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine or other rice, cooked with broth instead of water if possible
  • 1 cup riced or minced broccoli, from frozen or fresh
  • Handful chopped frozen spinach, could substitute fresh spinach
  • 2 eggs
  • 2 tsp. sea salt

Method

  • Add cooked rice, raw ground turkey, broccoli, spinach, salt, and eggs to large mixing bowl.
  • Mix all the ingredients with your hands until thoroughly combined, making sure no ingredients are clumped together.
  • Form into patties. You can make smaller or larger ones depending on your desired serving size.
  • Heat oil over medium heat for frying the patties. Patty should sizzle when it is placed into oil. Try not to overcrowd the pan. Monitor the heat, you want to be able to brown the patty on the first side and cook the burger through without burning.
  • Flip the burger over when it is about cooked through, then put the lid on the pan. Cook for an additional few minutes until cooked through. An instant-read thermometer inserted from the side of the burger into the center should register 160 degrees.
