Ingredients

  • 1/2 large beet*, roasted, peeled
  • 1/3 cup frozen blueberries
  • ¼ cup plain or vanilla coconut yogurt, like Cocoyo
  • 1 cup nut milk, like almond, cashew, etc.

Optional

  • 1 scoop vanilla or plain protein powder, like MRM Egg White Protein
  • ½ frozen banana

Method

  • Roast whole beets on a sheet pan lined with parchment paper (no oil) in the oven at 375F for 45 minutes. Let cool and peel off skin.
  • Put all ingredients in the blender and blend until smooth. You can adjust it to be less thick with more nut milk, if desired. It’s that easy!

Notes

*You can substitute prepared plain peeled/cooked beets bought in the refrigerated section of your grocery store in for roasting your own beets.
