1 Bowl Grain-Free Macadamia Nut Cookies
These cookies are easy to make with 6 ingredients, 1 bowl, and whatever nut butter you have, works! Substitute flours and customize. Gluten-Free & Dairy-Free, Grain-Free, too!

- 3 tbsp. macadamia nut flour, or almond flour or hazelnut flour in a pinch
- 1 cup packed Golden Lakanto Monkfruit sweetener, or regular Lakanto, or regular packed light brown sugar in a pinch
- 2 large eggs
- ½ tsp. vanilla extract
- 1 ¾ cup nut butter, like NuttZo, macadamia or almond
- Coarse or flaky salt for topping, optional
Preheat oven to 350°F
Combine Monkfruit sweetener and eggs until smooth in a large bowl with a spatula or wooden spoon.
Add vanilla extract and nut butter and mix until smooth.
Sprinkle macadamia nut flour and a pinch of salt onto mixture and mix until smooth and a homogenous dough forms.
Scoop onto parchment lined sheet pans and freeze the scooped dough for 10-15 minutes before baking (this step is optional, just know that the cookies will spread more). Sprinkle with coarse grain or flaky salt like Maldon (optional, to taste)
Bake smaller cookies for 14-15 minutes and larger ones 18-20 minutes. When finished the edges should be golden brown.
Cool on sheet pan before removing to wire rack. Enjoy!
