Equipment

  • 8"x8" baking dish or silicone moulds
  • heavy sauce pan
  • liquid measuring cups
  • whisk

Ingredients

  • 1 ½ cup fruit puree
  • ½ cup Swoon Sugar-Free Simple Syrup
  • 4 tbsp. powdered gelatin, I use vital proteins brand, 2 scoops

Method

  • Grease your glass dish or silicone moulds with coconut oil.
  • Warm ½ cup Swoon Syrup over low heat in a heavy bottomed saucepan (or microwave for 15 seconds in a glass measuring cup/bowl).
  • Add gelatin to the warm syrup and incorporate well by stirring.
  • Put aside and let sit so it can bloom.
  • Separately warm fruit puree over low heat until steaming hot but not boiling. Pull off heat.
  • Add the puree gelatin and Swoon mixture. Mix well.
  • (Optional) Add in other flavorings like vanilla bean.
  • Pour into gummy moulds or an 8”x 8” glass baking dish.
  • Refrigerate for 2 hours or until set. The larger the dish the longer to set.
  • If using a glass baking dish, cut into small squares and serve. If using molds, pop out of molds and serve.

Notes

  • You can use fruit purees/concentrates that are just the fruit, without the added sugar.
  • You can add in optional flavorings like ginger or vanilla bean.
  • You may be able to use gelatin sheets for this, but I have not tested it or know it's equivalent nutritive value to the powdered collagen gelatin.
  • You could use regular simple syrup, but the gummies would be very sweet, and I do not know the ratios you might need to change to account for that. Try the Swoon Syrup if you can!
