Grain-Free Everything Bagels

My grain-free everything bagel recipe is totally wheat-free, gluten-free, starch-free, and dairy-free! Made with almond flour, non-dairy mozzarella and cream cheese, everything bagel seasoning spices, and eggs, this is an breakfast or snack.

Ingredients

  • 3 cups dairy-free shredded mozzarella
  • ¼ cup Kite Hill almond cream cheese
  • 1 1/2 cups almond flour
  • 1/4 cup flaxseed meal
  • 1 tbsp. baking powder
  • 1 tsp. granulated garlic
  • 2 large eggs
  • pinch of sea salt

Topping Ingredients:

  • 1 egg, beaten
  • Trader Joe’s Everything Bagel Spice Mix

Method

  • Pre-heat oven to 400F. Line baking sheet with parchment paper.
  • Heat mozzarella and cream cheese for 1 minute, checking and mixing every 20 seconds. Stir until combined.
  • In a large bowl, add cheese mixture and all the other ingredients. Mix well. I use a combination of a mixing spoon and my hands to make sure everything is well incorporated and doughy.
  • Have a small bowl of water handy. Divide the dough into 5 balls.
  • Place on parchment and with wet hands, flatten and create a hole in the center, shaping dough into a bagel shape.
  • Beat 1 egg for egg wash. Brush egg over the top of the bagel. This will help the Everything Bagel Spice mixture to stick to the bagels. Top with enough spice mixture to cover the tops of the bagels.
  • Bake for 18-20 minutes or until golden brown.
  • Slice and top with dairy-free cream cheese or butter, avocado and pickled onions, make it into a sandwich!
