Equipment

  • Small Saucepan
  • Spatula
  • Large Mixing Bowl
  • Glass 8x8 Dish

Ingredients

  • 3 ½ cups crispy rice cereal, white or brown rice
  • 1 tbsp. coconut oil
  • ¾ cup organic tahini
  • ¼ cup honey or maple syrup
  • ¾ tsp. sea salt
  • ½ tsp. vanilla extract
  • 1 cup dark chocolate chips like Lily's, optional but strongly recommended

Method

  • Grease an 8x8” baking pan and line with parchment paper.
  • In a large mixing bowl, add crispy rice cereal.
  • In a small saucepan over low heat melt the coconut oil. Add the tahini, honey, salt and vanilla and gently warm and stir with spatula until smooth. Do not overheat or simmer.
  • Pour tahini-honey mixture over rice cereal and thoroughly coat the crispy rice. I used my hands for this. Add the Lily’s chocolate chips.
  • Press down firmly into prepared baking pan.
  • Freeze or refrigerate bars for 30 minutes.
  • Cut into squares in the pan and serve immediately.
