Grain Free Pumpkin Pancakes

 

INGREDIENTS:

1 ripe banana

4 Tbl. Pumpkin puree

4 eggs

dash of cinnamon

dash of ginger powder

pinch of salt

1 Tbl. coconut oil

 

METHOD:

In a high power blender, add banana, pumpkin, spices and salt.  Blend until smooth.

Add eggs and blend well.

Heat pan with coconut oil over medium high heat.

Add batter and smooth into round shape. Flip when browned.

Eat warm with maple syrup or finish with nut/seed butter and fresh fruit.

Makes four large pancakes.
