ITALIAN BEEF “MEAL IN A BALL”

Trust me, you will want to double this. Cook them off and freeze extra.

 

INGREDIENTS:

1 LB. GROUND ORGANIC GRASS FED BEEF

½ ONION, DICED

3 CLOVES GARLIC, MINCED

½ CUP FRESH BASIL, CHOPPED

1 CUP TOASTED PINENUTS

8 OZ. FROZEN KALE, THAWED AND WRUNG DRY

1 tsp. SEA SALT

METHOD:

Pre-heat oven to 375 F. Line a sheet pan with parchment paper.

Add all the ingredients into a large mixing bowl. Wash your hands and mix well.

Roll into 1-2” sized balls and place on sheet pan. Make sure the size of the meatballs is uniform, so they cook evenly.

Put balls into oven for 20-30 minutes depending on size of the meatballs.

Serve with marinara over zucchini zoodles.

Let cool before freezing.
