PINEAPPLE CUCUMBER SALAD

This salad comes together in minutes, perfect for potluck or BBQ. Summer in a bowl.

 

INGREDIENTS:

1 fresh pineapple

1 lb. thin skinned cucumber, cubed

1 lime, zest and juice

Large handful chopped cilantro

Small handful chopped mint

1 tsp. good salt

Additions: avocado, jicama or arugula (or all 3)

METHOD:

Peel pineapple. Cut into quarters, lengthwise. Remove core.

Cut into a medium dice. Place in large mixing bowl.

Slice cucumbers lengthwise. Cut into half-moons. Add to pineapple.

Add the rest of the ingredients and mix gently.

So good!! 

Top with ripe avocado.  Add diced jicama for added crunch. Serve on bed of arugula. Go wild.
