This is the BEST shrimp salad recipe! I found wild caught cooked bay shrimp at Costco in the freezer section. Now I always have a bag for an easy fast high protein meal. Love this shrimp salad served in butter lettuce leaves with a little added cucumber.

Ingredient Tips:

Make sure you use wild-caught shrimp, it’s much healthier for you! Primal Kitchen Mayo is a great brand to use because it’s all real ingredients, no fillers or dairy.

INGREDIENTS:

8 oz. wild caught bay shrimp (pre-cooked)

1 stalk diced celery

1 diced carrot

¼ diced onion

1 Tbl. capers

2 Tbl. olive tapenade or chopped pitted Kalamata olives

1 Tbl. lemon juice

1/3 cup mayo like Primal Kitchen brand

¼ tsp. salt

¼ tsp. black pepper

METHOD:

Drain the bay shrimp well.

Mix all ingredients well. Adjust salt and pepper to taste.
