CELERY ROOT FRIES

Low carb root vegetables are where it’s at and this one is loaded with Vitamin K, Vitamin C, phosphorus and fiber.

INGREDIENTS:

3 celery root bulbs

2 Tbl. oil

1 tsp. cumin

1 tsp. smoked paprika

2 tsp. sea salt

METHOD:

Very lightly run with minimal olive or avocado or suncoco oil (less oil – faster crisp).

Sprinkle good sea salt and pop into oven for 30 minutes.

Toss the fries around every 10 minutes to make sure they don’t burn.

I had to broil my celery root fries at the end for about 4 minutes to get a good crunch.

Adjust salt and dip away.

Made a blue cheese dip and a dairy free mac nut garlic lemon 🍋 sauce for dipping. You gotta have dipping, people! Can’t wait to do this again.
