GFCF Ranch Dressing

 

INGREDIENTS:

1 cup raw cashews

water for blending

1 lemon: juice and zest

1 Tbl. Cider vinegar

1/8 cup chopped fresh dill

¼ cup chopped fresh chives

4 Tbl. fresh chopped flat leaf parsley

¼ tsp. garlic powder

½ tsp. sea salt

¼ tsp. ground black pepper

METHOD:

Cover cashews with water and soak overnight.

Drain cashews.

In a high-speed blender (Blendtec or Vitamix) add cashews, lemon juice and zest, and cider vinegar. 

Blend until smooth, adding water a tablespoon at a time until dressing like consistency.

Add fresh herbs, garlic powder and salt & pepper to blender.  Finish processing.

Eat as a dip, dressing or sauce. Good on almost everything.
