PAPAYA AVOCADO SALSA

Want something different to bring to your next potluck or family gathering? Papaya Avocado Salsa is perfect with chips, arranged over grilled chicken, roasted pork loin or paired with a fish taco.  Finger lime adds a unique touch to this salsa!

Gluten-Free and Dairy-Free as usual so everyone can dig in. Vegan/Vegetarian, too!

INGREDIENTS:

1 RIPE PAPAYA, DICED
1 RIPE AVOCADO, DICED
½ RED BELL PEPPER, DICED
¼ CUP ONION, DICED
1 SMALL BUNCH CILANTRO, CHOPPED
1 HANDFUL FRESH MINT LEAVES, CHOPPED
1 LIME, JUICED
1 FINGER LIME, INNER BEADS ONLY (OPTIONAL FOR THOSE WHO CAN’T FIND IT!)
1 TSP. SEA SALT

METHOD:

  1. CHOP OFF PEEL OF PAPAYA, DICE INTO SMALL CUBES, PUT INTO MEDIUM BOWL.
    2. DICE THE RIPE AVOCADO AND THE RED BELL PEPPER INTO SMALL CHUNKS, PLACE INTO BOWL.
    3. CHOP CILANTRO AND MINT, ADD TO THE SALSA MIXTURE.
    4. ADD THE LIME JUICE OVER TOP. ADD THE INNER BEADS OF THE FINGER LIME.
    5. ADD THE SALT, AND LIGHTLY TOSS WITH A SPOON. ADJUST SEASONING TO TASTE.
