THAI TURKEY “MEAL IN A BALL”

I always double this recipe and freeze the extra.

 

INGREDIENTS:

1 lb. ground organic dark meat turkey (I like Diestal brand with dark meat.)

8 oz. bag frozen spinach, thawed and wrung dry

½ onion, finely chopped

1 cup chopped cashews

1 large handful chopped cilantro

15 chopped mint leaves

1 tsp. sea salt

 

METHOD:

Preheat oven to 375F. Line sheet pan with parchment.

Place all ingredients into large mixing bowl. Wash hands and incorporate well.

Roll balls between 1”-2” in size. Make sure meatballs are uniform in size so they’ll cook evenly.

Place balls on parchment lined sheet pan.

Cook for 20-30 minutes depending on size of the ball.

These meatballs are great with a nut or peanut sauce, Vietnamese nuoc mam or sweet Thai chili sauce.  Rice noodles are a great GF pairing with these balls. 

Cool completely before freezing.
