THE BEST GRAIN FREE CHOCOLATE CHIP COOKIES EVER

 

How can a grain-free, sugar-free and egg-free cookie rock so hard? Must be magic. Using some amazing ingredients made from real food, these cookies are really really delicious. Replacing the eggs with a substitution like Neat Egg makes it no problem to be egg-free and still have that satisfying cookie. Gelatin helps these cookies to not spread. Sugar-free, grain-free, dairy-free, egg-free—but flavor-FULL! So what are you waiting for? Go make some.

INGREDIENTS:

DRY INGREDIENTS:
3 CUPS BLANCHED OR REGULAR ALMOND FLOUR
1 TSP. BAKING SODA
½ TSP. SALT
1 TSBP. GELATIN LIKE VITAL PROTEINS BEEF GELATIN
WET INGREDIENTS:
½ cup non-dairy butter, softened/room temp
¼ CUP COCONUT OIL
¾ CUP SUGAR FREE SWEETENER LIKE LAKANTO MONKFRUIT SWEETENER
2 EGG SUBSTITUTION WITH EGG REPLACER LIKE NEATEGG (2 TBSP. WITH 4 TBSP WATER)
¼ TSP VANILLA EXTRACT
LAST INGREDIENT:
1 ½ CUPS CHOCOLATE CHIPS OR SUGAR-FREE CHOCOLATE CHIPS LIKE LILY’S SWEETS CHOCOLATE CHIPS

METHOD:

  1. PREHEAT OVEN TO 350 F, LINE A COOKIE SHEET WITH PARCHMENT
  2. COMBINE ALL THE DRY INGREDIENTS IN A SEPARATE BOWL, WHISK LIGHTLY TO COMBINE, SET ASIDE.
  3. COMBINE NON-DAIRY BUTTER, COCONUT OIL, AND SWEETENER IN A STAND MIXER OR BOWL AND BEAT UNTIL CREAMY.
  4. ADD IN YOUR “2 EGGS” EGG REPLACEMENT MIXTURE AND VANILLA, BEAT INTO BATTER UNTIL WELL INCORPORATED. FOLLOW THE DIRECTIONS ON THE
  5. EGG REPLACER PACKAGING BEFORE ADDING.
  6. ADD DRY MIXTURE A LITTLE AT A TIME AND INCORPORATE INTO WET MIXTURE UNTIL WEL COMBINED.
  7. ADD IN CHOCOLATE CHIPS AND MIX IN WITH HANDS OR A SPOON.
  8. COVER BOWL AND PLACE IN REFRIDGERATOR FOR 30 MINS.
  9. FORM DOUGH INTO 1-2 INCH BALLS. PLACE ON PARCHMENT-LINED COOKIE SHEET, ABOUT 3 TO A ROW.
  10. BAKE FOR ABOUT 17 MINUTES. COOL ON WIRE RACK. (OPTIONAL) SPRINKLE WITH SEA SALT WHILE HOT.
