If you’re looking for a delicious, nutritious smoothie that can brighten up your day, Dairy-Free Beet & Blueberry Smoothie is for you. Roasted beets, wild blueberries, coconut yogurt and nut milk are the simple base for this magenta nutrition-packed beverage. This is sure to wake up your senses and be great for breakfast for the whole family, especially kids! Super simple to make by dumping all the ingredients in your blender and it’s ready to go.
This recipe is gluten-free and dairy-free, as always, plus it’s Paleo, and Vegan if you use a plant-based protein powder, or omit the protein powder.
Ingredient Tips:
Roasting fresh beets is easy. Just wash the beets, then put them in the oven whole at 375F for 45 minutes. Take the beets out, let them cool, and peel off the skin. Now you’re ready to use them in tons of ways, from this Beet Blueberry Smoothie to an Easy Beet Salad, to Roasted Beet Hummus. Frozen wild blueberries are a great choice for this Beet & Blueberry Smoothie because they have more antioxidant power. Plus, they are easy to find alongside regular blueberries in the freezer section of your grocery store.
Protein powder in this recipe will make you feel fuller for longer, especially if you are having this smoothie for breakfast. I chose to use MRM Nutrition’s Vanilla Egg White Protein Powder. You could use any vanilla or plain protein powder you love, or omit this ingredient.

Beet & Blueberry Smoothie - Dairy-Free
Equipment
- Sheet pan
- Blender
Ingredients
- 1/2 large beet*, roasted, peeled
- 1/3 cup frozen blueberries
- ¼ cup plain or vanilla coconut yogurt, like Cocoyo
- 1 cup nut milk, like almond, cashew, etc.
Optional
- 1 scoop vanilla or plain protein powder, like MRM Egg White Protein
- ½ frozen banana
Method
- Roast whole beets on a sheet pan lined with parchment paper (no oil) in the oven at 375F for 45 minutes. Let cool and peel off skin.
- Put all ingredients in the blender and blend until smooth. You can adjust it to be less thick with more nut milk, if desired. It’s that easy!
