This Cauliflower Date Smoothie is worth getting out of bed for! It’s lightly sweet, creamy, and full of good fats to keep you going throughout the day. I’m feeling a little tahini crazy these days, so I used sesame milk in this smoothie recipe to enhance that toasty sesame flavor. (Using tahini and sesame milk also makes this nut-free!) I popped in some dates, a few chunks of frozen bananas and leftover cooked cauliflower and boom! Now I’ve got a delicious dairy-free, gluten-free breakfast or snack. Check out the ingredient tips for easy substitutions and additions to this smoothie.
Ingredient Tips:
Cauliflower is the secret veggie you need to sneak into your smoothies! Perfect way to get some nutrients into your day (great for kids!). For the cauliflower, you can use the stems, florets or riced cauliflower, just make sure they are cooked. I froze some leftover cauliflower and used that in my recipe video.
When my bananas get ripe I cut them into chunks and store them in the freezer. Be sure to peel bananas before you put them in the freezer, or you’ll learn the hard way! I have them ready any time for smoothies or for 1-Ingredient Dairy-Free Banana Ice Cream!
Tahini is a paste/butter made from ground sesame seeds. Tahini contains a good variety of vitamins, minerals and is rich in anti-inflammatory monounsaturated fats. Most people think of it just as a main ingredient in hummus or dressings, but it can do so much more! If you don’t have tahini, you could use another nut butter like almond instead.

You can use any nut milk for this smoothie, but I love the combo of sesame milk with the tahini. Almond or cashew milk would be great as well. You may need more than 1 cup, depending on your consistency preferences.
Optional ingredients for this recipe include collagen powder and cinnamon. I love to add collagen powder wherever I can for the protein and benefits for my hair and skin. I use Vital Proteins unflavored collagen powder for this, but you can use your favorite brand, too. Cinnamon adds a nice touch of warmth, but it is to your taste preference.
As always during this time of staying home to stay well, make substitutions and get creative to use what you have in your kitchen!
My favorite ingredients/products for this recipe:
-
Organic Tahini: Baron’s Organic Tahini is smooth, not bitter, and stone-ground. Full of vitamins, fatty acids and antioxidants, tahini is a must-have for your pantry! You can find tahini at almost any grocery store. The tahini at Trader Joe’s and Whole Foods taste great and have a great price point as well.
-
Sesame Milk: I love the Three Trees Sesame Nut & Seed Milk which is a blend of almonds, sesame seeds, dates and pink salt. If you see it in your grocery store, try it out! You can also try this highly rated sesame milk from Hope & Sesame that has pea protein and no added sugar.
-
Vital Proteins Unflavored Collagen Powder: this powder is packed with protein, has no flavor and dissolves easily. Collagen supports healthy hair, skin and nails- I mix it into my morning beverages every day!
