Garbanzo Bean Salad is canned garbanzo beans/chickpeas plus easy on-hand ingredients made into a delicious chicken-salad or tuna-salad style lunch or dinner. Budget-friendly, fast, plant-based, pantry meal to make when you’re low on fresh ingredients. Gluten-free and dairy-free.
I was sitting here wondering what to eat next, and I thought, “What do I have in my pantry?” I saw a can of garbanzo beans-boom, got it! I decided to make these chickpeas in the style of tuna/chicken salad. It’s a throw it all in the bowl and mix kind of recipe. Perfect when you’re hungry and need something nourishing, quick.
Ingredient Tips:
Garbanzo beans and chickpeas are the same thing, just different names. You can get them precooked in a can and organic under $2! Be sure to save the liquid from the can, it’s called aquafaba. You can made some pretty cool dairy-free recipes with aquafaba, which whips up light and airy like egg whites.

For the pickles, you can use sweet or dill pickles. Feel free to add in any spices you like such as cumin or garlic. You could add in fresh herbs like cilantro, rosemary, dill, or chives.

Garbanzo Bean Salad
Equipment
- Medium mixing bowl
Ingredients
- 1 can garbanzo beans/chickpeas, drained & rinsed
- 3 small dill or sweet pickles, diced
- 3 celery stalks, diced
- ½ cup white or red onions, diced
- 1 whole peeled canned/jarred green chili, diced
- 1/4 lemon, juiced
- 3 tbsp. mayo, like Primal Kitchen
- 1 tsp. pink or sea salt
Optional
- Additional spices like cumin,garlic, fresh herbs, to taste
Method
- Drain and rinse beans. Dice pickles, celery, onion, green chili (if using).
- Add all ingredients and stir until all are incorporated.Adjust seasonings and add any herbs/spices you like, to taste. Enjoy!
Made this, super easy once you think of it like making tuna salad. I always have chickpeas in hand so I’ll make this again.
