I love a versatile cookie that I can make in just minutes. That’s where this grain-free macadamia flour cookie comes in. Just 6 ingredients in one bowl mixed by hand. Easy, gluten-free, (sugar-free if you want), and delicious. This recipe makes about 2-3 dozen, depending on the size you make them. You can switch out the nut flours and butter in this to make your own flavor profile, too. I used my favorite roasted macadmia nut flour from Kipuka Mills and NuttZo nut butter because that’s what I had in my pantry.
This recipe is based off of one by Kipuka Mills, a Hawaiian macadamia nut product company. Cool thing about this product is that this macadamia flour is what is left after they press macadamia nuts for the oil. So #nowaste! You can find the original recipe here. I adjusted their to what I had on hand, and switched out the light brown sugar for Lakanto Golden Sweetener to make it sugar-free.
I don’t have some of the ingredients, what do I do?
My roasted macadamia nut flour is from a small Hawaiian company called Kipuka Mills that is local to me (I live in Maui). You can find a similar macadamia flour linked below. You could use almond or hazelnut meal/flour in a pinch, but it will taste like those nuts instead.
Use any nut butter you have on hand like Nuttzo, almond butter, even hazelnut butter. Macadamia nut butter makes this extra scrumptious. You can even make your own in the food processor! Don’t have macadamia nut flour? Pulse some macadamia nuts in the blender until you get the fine flour consistency, just don’t go too far or you’ll make nut butter.
Don’t have Lakanto Golden Sugar? I’ve linked where you can get some here and in the list below. You could go ahead and use golden coconut sugar, light brown sugar, or regular Lakanto if you want! “Golden” sugars will give you more of the toasty, nutty flavor profile. Make sure to adjust the batter using different sugars to taste, as they all have different sweetness levels.

1 Bowl Grain-Free Macadamia Nut Cookies
Equipment
- Spatula or Wooden Spoon
- Large Mixing Bowl
- Baking Sheet
- Oven
Ingredients
- 3 tbsp. macadamia nut flour, or almond flour or hazelnut flour in a pinch
- 1 cup packed Golden Lakanto Monkfruit sweetener, or regular Lakanto, or regular packed light brown sugar in a pinch
- 2 large eggs
- ½ tsp. vanilla extract
- 1 ¾ cup nut butter, like NuttZo, macadamia or almond
- Coarse or flaky salt for topping, optional
Method
- Preheat oven to 350°F
- Combine Monkfruit sweetener and eggs until smooth in a large bowl with a spatula or wooden spoon.
- Add vanilla extract and nut butter and mix until smooth.
- Sprinkle macadamia nut flour and a pinch of salt onto mixture and mix until smooth and a homogenous dough forms.
- Scoop onto parchment lined sheet pans and freeze the scooped dough for 10-15 minutes before baking (this step is optional, just know that the cookies will spread more). Sprinkle with coarse grain or flaky salt like Maldon (optional, to taste)
- Bake smaller cookies for 14-15 minutes and larger ones 18-20 minutes. When finished the edges should be golden brown.
- Cool on sheet pan before removing to wire rack. Enjoy!
