This gluten-free pasta with Mexican clam sauce is one of my favorite recipes, and I’ve used it everywhere from dinner parties to the camp fire. That’s right, I’ve taken this recipe camping! That’s how easy this is with mostly pantry ingredients and canned foods. It’s a clam sauce with a Latin American fusion flavor profile that can be made as garlicky and/or spicy as you like. This is a perfect recipe to change up your regular pasta game.
Ingredient Tips:
When it comes to gluten-free pastas and noodle alternatives there are so many options these days. You can go for a packaged gluten-free pasta, whichever brand works for you. Substituting spiraled veggies like zucchini would be great for this as well. In my video recipe I chose to try out a new product Palmini which is a linguini made from hearts of palm. It’s great for keto diets.
I absolutely love garlic. You can use up to five cloves in this recipe depending on how much you like it. You know I’m using all five.
Use a high quality olive oil, it really makes a difference in a recipe like this with only a few ingredients. Be sure to pick one that is cold pressed, and should be in either a green/dark glass bottle or a BPA-free metal container. Sourcing information and certifications of quality are good to look for to make sure it is not blended with other low-quality oils.
Canned chopped tomatoes with green chilies like Rotel or the organic grocery store brand varieties are a great pantry staple. I love the spice it brings in and the ease of pulling them out of the pantry for so many recipes.
The citrus in this recipe truly lifts it. You want to use the zest as well as the juice because it really brings the flavor. Hot tip: don’t put the juice right into the hot oil in the pan because it will splatter everywhere!

Gluten-Free Pasta with Mexican Clam Sauce
Ingredients
- 1-5 cloves garlic, peeled and chopped
- 3 Tbl. olive oil
- 1-2 cans chopped clams with juice
- 1 can chopped tomatoes with green chilies, like Rotel
- 1 small can chopped green chilies, optional
- 1 lime, juice and zest
- 1 tsp. sea salt
- 1 large bunch of cilantro, rough chopped.
- 1 package gluten-free pasta, can use zucchini zoodles or any GF pasta that works for you
Method
- Instructions:
- In a large sauté pan, add olive oil and garlic. Sauté over medium heat just until garlic starts to sizzle, about 2 minutes.
- Add the rest of the ingredients except the cilantro.
- Stir and warm ingredients for 5 minutes.
- Pull off heat and add the cilantro.
- Add your cooked pasta of choice, stir in and enjoy.
